2 cups yellow or white corn meal.
1 salt.
1 tsp black pepper
2 tbls Lemon Pepper Seasoning
Vegetable Oil
Mix the meal and seasonings together in paper bag..
Be sure the fish is reasonably dry by draining on a
paper towel.
Drop into the bag with the corn meal mixture and shake up..
Remove from the bag, shake off the excess meal.
Heat the oil to 375 degree (F).
Drop fish into the hot oil, crefully so mit doesn't splash. Be sure not to over crowd the pot.
Shake basket lightly right after you put into oil to prevent sticking,
Remove when the fish starts to turn golden brown and float (about 3 minutes).
Make sure you don't overcook the fish.
Remove and drain on a wire rack.
Serve with fresh lemon wedges, french fries,
hushpuppies and pinto beans.
